When a blockade runner makes it to Mobile with a cargo of bananas this is a delicious recipe that you can try. There are other versions of Banana Bread recipes, but this one is from Alabama where pecan nuts grow. I am told that if you cannot get pecans you can use walnuts or almonds or hazelnuts. If you don't like nuts you can miss them out altogether!
What you need 1 3/4 cups of sifted flour 2 teaspoons of baking powder 1/4 teaspoon of baking soda 1/2 teaspoon of salt 1/3 cup of butter 2 eggs 2/3 cup of sugar 1 cup mashed ripe (black) bananas (2-3) 1/2 cup of chopped pecans |
What you do
Sift together the flour, baking powder, soda and salt. Beat
butter until creamy. Add sugar gradually and continue beating until light
and fluffy. Add eggs and beat well. Add flour mixture alternately
with bananas and nuts, a small amount at a time, beating after each
addition until smooth. Turn into a well-greased 9x5x3 inch loaf tin and
back at 350F for about 1 hour and 10 minutes or until bread is done. This
makes one loaf.
